Rudi’s Gluten Free Tortillas

I have been meaning to review these new tortillas from Rudi’s Gluten-Free Bakery since they were kind enough to send them to me a while back.  I received all three of their new varieties: Spinach, Plain, and Fiesta.

Now I was a big wrap person before my diagnosis so was immediately excited at the prospect of once again enjoying a wrap in something other than a plain corn tortilla.  The first thing that I noticed about these tortillas was that they were extremely flexible straight out of the bag – not doubt because of the complex gluten-free flour base that Rudi’s uses that contains: Sorghum, Brown Rice, Corn, Amaranth, Quinoa, Millet, and Teff.  The consistency and texture is really quite unique being a bit thicker than what you would expect in a traditional corn tortilla but having far more flexibility.  Now Rudi’s does recommend quickly heating their tortillas which I also tried and they do become even more pliable – but I do have to confess that I often just ate them right out of the bag.

The Plain variety has a subtle sweetness that I really enjoyed and paired well with everything from eggs in a breakfast wrap to the perfect quesadilla filled with cheese made right in the oven (which made the edges wonderfully crisp – just a little tip there).  The Spinach variety was a real standout with not only the spinach taste you would expect but subtle undertones of cilantro and garlic.  They also paired well with pretty much anything I could think to eat them with but made a particularly good hummus-lined wrap filled with some fresh veggies.  The Fiesta flavor was an interesting mix of the sweetness from the tortilla based elevated with a touch of jalapeno flavor but was not at all overly spicy and was the perfect wrapping vessel for making taco wraps.  A bit of beef, lettuce, tomato, cheese, and a schmear of beans, and some salsa helped take tacos to the next level.

If you are looking for something to help make breakfast, lunch, or dinner a bit more interesting then I would definitely recommend giving these tortillas a try.  They are so easy to use and versatile that the possibilities are pretty much limited only by your imagination.  You can find out where to purchase Rudi’s in your area right on their Web site where you can also learn more about all of their great gluten-free products (I am a sucker for their Cinnamon Raisin bread).
